FONTAINEBLEAU LAS VEGAS’ POOLSIDE RESTAURANT LA CÔTE WILL OPEN TO THE PUBLIC, APRIL 10
French-Mediterranean dining destination to debut prix-fixe lunch menu and offer valet validation for guests
La Côte, Fontainebleau Las Vegas’ al fresco dining destination, is opening on Thursday, April 10, and for the first time, it will be open to both resort guests and visitors. The French-Mediterranean culinary hotspot will be open for breakfast, brunch and lunch – featuring both an à la carte and three-course prix-fixe lunch menu within a picturesque poolside setting.
“We are thrilled to be extending the incredible La Côte experience to non-hotel guests this summer. The restaurant was a guest-favorite last season, so to be able to bring Executive Chef Francisco Campa Fuentes’ elevated, light and refreshing creations to hotel guests, visitors, and locals further compliments the resort’s exemplary culinary experience,” says Fontainebleau Las Vegas Senior Vice President of Food and Beverage Anthony Olheiser. “With the debut of our new prix-fixe lunch menu, La Côte sets the table for a mid-day power lunch, perfect for business travelers and, especially, locals looking for a daytime escape in one of the city’s most luxurious and relaxing settings.”
La Côte’s three-course lunch menu is priced at $50 and features a first course option of the La Côte Caesar Salad or Ahi Tuna Tartare. The second course offers Egyptian Falafel, Grilled Chicken “Club,” or Chicken Milanese; finishing off with a serving of Baklava for dessert.
The restaurant also features à la carte French-Mediterranean inspired dishes like Ahi Tuna Niçoise Salad, made with haricot verts, potato, kalamata olives, tomato, gem lettuce, hard-boiled egg, fine herbs and Banyul’s vinaigrette; Blackened Mahi Tacos, made with cabbage slaw, salsa bandera and oregano aioli; Achiote Marinated Steak Tacos made with tomatillo salsa, grilled scallion and escabeche, and more.
La Côte is located on the resort’s six-acre Oasis Pool, and is open Thursdays through Mondays, with the special prix-fixe lunch menu available from 11 a.m. to 12:30 p.m. Guests are encouraged to park in the North Valet and use the guest elevators to access La Côte on level three.
Guests can take advantage of Fontainebleau Las Vegas’ valet-validation program – allowing visitors dining at the resort’s world-class restaurant and bar collection, spending within retail spaces, or enjoying a treatment at Lapis Spa & Wellness and IGK Salon to validate their valet.

Now Open at ARIA Resort & Casino



Major Food Group, the luxury hospitality company founded by Mario Carbone, Rich Torrisi and Jeff Zalaznick has officially opened the first Parm Famous Italian outside of the East Coast.
Now open at Proper Eats Food Hall inside ARIA Resort & Casino, Parm is welcoming guests daily starting at 11 a.m.
Joining the illustrious lineup of Major Food Group’s acclaimed restaurants in Las Vegas, including the globally celebrated CARBONE at ARIA and beloved Sadelle’s at Bellagio, Parm brings classic Italian-American soul food to the heart of the Las Vegas Strip.
While Carbone at the Aria is among the hardest reservations to nab in Las Vegas, Parm serves up Italian-American comfort classics that chefs Carbone and Torrisi grew up with and it’s located just down the hall from its powerhouse predecessor. Some of the most popular dishes include, the Chicken Parm Sandwich, slathered in melted cheese between seeded Italian bread, Rotini in spicy vodka sauce, an Italian sandwich with five meats, spicy sauce, and Italian dressing, and homemade meatballs.




Other dishes include: Golden melty mozzarella sticks, pizza knots tossed in garlic butter, a cheese-draped cutlet stuffing a chicken parm sandwich, a house roast beef sandwich with thinly sliced beef, a heap of Rotini Genovese with basil pesto and burrata, and spaghetti and meatballs harnessing imported Neapolitan pasta and of course cannoli made from house dough.

Parm is open daily from 11 a.m. to 10 p.m. Sunday through Thursday; and 11 a.m. to 11 p.m. Friday and Saturday.

Temaki Bar at Proper Eats – Aria Hotel & Casino

Temaki Bar serves only the freshest and sustainability caught fish, all of which is hand selected and inspected by lead sushi chef JoJo Ruiz, a James Beard Foundation Smart Catch Leader. Having originated in Encinitas, Calif., Temaki expanded a second location to the Las Vegas Strip’s Proper Eats communal food hall. While Temaki is a direct link to the Japanese gambling dens where handrolls first originated over a century ago, no chances are taken with its food and ingredients, Temaki does things the traditional way and the hard way with daily visits to fish markets and local rice farms, ensuring perfect handrolls, sushi rolls and nigiri.
